The baked marinated salmon with diced vegetables is a healthy and easy recipe which, net of the waiting time for the marinade, can be made in a short time. Ideal to prepare in advance. The marinating makes the difference: a technique to be used when you want to give a persistent flavor or aroma to meat, fish, but also vegetables. In this case we have a marinade prepared with extra virgin olive oil and dry white wine. • 1 potato

• 1 courgette


• 1 fennel



• 100 g of colored cherry tomatoes



•  virgin olive oil
4 tablespoons


• 1 clove of garlic



• salt




• pepper For the marinade




• 4 salmon fillets of 200 g each


• 200 ml of two tablespoons of extra virgin olive oil


• 100 ml of dry white wine


• aromatic herbs to taste (rosemary, thyme, chives)

Step1


Preparing this marinated salmon in the oven with diced vegetables is simple.




•  First wash and pat dry the salmon fillets with kitchen paper.


• Remove any thorns with tweezers.

•  Prepare the marinade:



• wash and dry the aromatic herbs, then chop them and collect them in a pyrex container or baking dish.




•  Add the extra virgin olive oil, the wine and the salmon fillets.


•  Cover with food film and keep in the fridge for at least 3 hours.

  Remove the salmon from the marinade and place it in a baking dish.


Massage it with part of the marinade, adding salt and pepper.
